Peaberries are a genetic mutation of coffee seeds that form individually inside a cherry, as opposed to when the fruit typically develops two "flat" beans, this occurs naturally in 10% of all coffee. Normally peaberries are included with the rest of a coffee crop, however in some cases they are hand sorted and sold as its own product. The result of using all peaberries in a roast is a more intense flavor, as the coffee plant devotes more energy towards growing single seeded cherries.
